But, since going gluten free, I have become a "trier!" My new favorite food has become spaghetti squash. It's so simple to cook and can be made in many ways. If you don't have time to make an "extravagant" dinner but want something delicious, give this scrumptious veggie a try!
Easy cooking tips:
1. Cut spaghetti squash in half. Scoop out the seeds.
2. Add your favorite seasoning to the top of the squash. My favorite is simply some garlic, salt, and pepper.
3. Place the squash face down in a glass dish. Add a small amount of water to the bottom of the dish.
4. Cook in the microwave on high. Cook times will vary depending on the size of the squash. I usually cook it for about 15-20 minutes.
5. The spaghetti squash is done when a fork can easily pierce it.
6. Use the fork to scoop out the squash, season again as you like, and enjoy!

ReplyDeleteKim you are so brave! My mom was recently diagnosed with an auto-immune disease forcing her to go gluten free as well. Her disease is hereditary, so there is a chance I may develop it too...meaning I need to start wrapping my mind around gluten free! This looks amazing and I cannot wait to read more of your yummy recipes to come! Thank you for sharing!

ReplyDeleteThanks for sharing this recipe, Kim! I love spaghetti squash - my mom makes it with cinnamon sugar and it's amazing - but I've never tried to make it myself! I'm excited to try your recipe out, it seems simple enough that I don't think I could screw it up too bad (knock on wood :)) I was on the gluten-free diet all throughout college and haven't been following it recently, but I still do use a lot of gluten-free products, I just don't always eat gluten-free anymore. So I don't know if you said how recent your diagnosis was, but I'd be happy to share products that I really enjoy with you as well.
